Our sifted bread flour is a 80-85% high extraction sifted wheat flour. It is neither a white flour nor a whole-wheat flour. Instead, it is a stone-ground flour from whole grain wheat berries that is sifted after milling. This results in a strong and extensible flour that has the strength of a white flour and the aroma and nutrition of a whole-wheat flour. This is the flour we use as the foundation of our bread. It is excellent for bread, pizza, tortillas, and pasta. Milled from Colorado and Utah grown hard red wheat.
