Something a little unusual from Ryan at The Farm on Maple Drive this week: black garlic!

These whole heads of garlic have been slowly preserved over time, transforming the cloves into something completely different from fresh garlic. The cloves become dark, soft, and almost jammy, with a sweet, mellow, deeply savory flavor and a hint of balsamic-like richness.

It's delicious spread on toast, stirred into sauces, blended into dressings, mashed into butter, or added to anything that could use a little extra depth. If you've never tried black garlic before, this is a fun one to experiment with!
