Organically grown by Peter McCarville. Classic russet skin with dry, mealy white flesh—excellent for baking and hearty dishes. These small to medium spuds (ranging from billiard ball to marble size) are also used for mashed potatoes, just add extra milk and butter for a fluffy finish.

Peter McCarville farms organically in the higher elevations of the North Fork Valley near Crawford. Less pest pressures and cooler evenings in this area allows him to grow lettuce all summer long without the aid of a greenhouse. The climate and growing season is favorable for some cooler weather crops like broccoli, root vegetables, and even squash. Peter has been gardening his entire life (60+ years) and lived/gardened in the Crawford area for over 30 of those years. As a trained and practicing professional geologist, he brings his knowledge of soils (derived from the local rocks) and chemistry to his gardening venture. And, as most consumers and farmers know, it all starts with the soil!
