Nido opened it’s doors in Paonia, Colorado in June of 2019. Their menu is traditional Mexican cuisine with multi-cultural influences. Each menu item is uniquely created with fresh, organic ingredients that are local when possible.

The owner and operator, Chef Ed Vaughn, is an award winning chef who has owned several successful restaurants over the past few decades. He created Taco Bliss, a very popular food trailer in Paonia, 8 years ago. Recently, he merged the menu with Nido’s, and now serves his renowned tacos in the restaurant instead of the Taco Bliss trailer. In addition to his delicious and original tacos, Nido serves a variety of fresh corn street tamales.
