This bison/pork sausage comes frozen, but once thawed out, it’s self stable for days. Perfect for backpacking trips and charcuterie boards.

Fire Mountain Ranch bison roam wide open spaces and have a life with minimal contact with humans. Bison is lean, so it is mixed with a little pork to give the sausage more fat. This sausage does have a small amount of nitrates used for preserving.

Believing that small agriculture and a deep connection to food is healthier for humans and the Earth, the Williams family embarked on a ‘ranch to table’ bison operation.The bison are true survivors and the embodiment of majestic strength. In their eyes, the iconic resilience of The American Bison soon came to represent their family crest. Like the bison, when moments of adversity presented, the Williams family adapted. When faced with near total obliteration and loss… they, like the bison, have endured.

Mrs. Williams is a medical researcher and Mr. Williams a former ski area manager. In 2023, their son experienced a life-changing diagnosis that forced the couple to reevaluate their priorities and trajectory. The Williams family decided to reinvent themselves with bison ranching.

Serendipitously, Sam’s relatives, Dave and Sue Whittlesey own and operate a bison ranch called “High Wire Ranch” in Hotchkiss, CO. For over 40 years, they have successfully raised 100% grass-fed and finished Western Colorado bison meat, practicing humane animal husbandry. They said they were willing to mentor the Williams family in bison ranching, as they transition into retirement.

There are no middlemen between the bison and the consumer, such as feeding lots, warehouses, or retail handlers.
