A Roman-style dry-cured salami, spicy from pepper and chile flakes. Hand crafted lovingly with Down Home Farm’s Pork, Redmond’s salt, black pepper, farm grown chili pepper, local wine, pink curing salt*
*contains sodium nitrite

This  salami is dry-aged to perfection. The fruit in the pigs diet has lead to a melt in your mouth salami that is full of flavor. These pigs are fed barley, soaked whey, greens, hay, alfalfa, and fruit. It is a slow feed, no corn and soy feed here!

Why we love to support Down Home Farms:

Daniel Larcker & Lauren Kenton are the masterminds behind Down Home Farms. Together they are working to bring high quality, humanely raised pork products to market. I visited their farm in the summer of 2024 and was so impressed with the love and care they give their pigs, and the facility that they have built to process the meat. When you purchase Down Home Farms meat it is coming directly from this special couple, I am just serving as transportation.

A Little More About Their Story:

Daniel was working on a farm in Denver and felt the pull to get out of the city, he moved to Paonia in 2016. Lauren had some farm experience but not with pigs. In 2018 Daniel brought home a few piglets. They quickly learned how to butcher, breed, farrow, and further process the meat and fat together.

A cold smoker was built and bacon was made. Daniel also learned the traditional ways of dry aging whole muscles and making salami. Lauren rendered the fat to make lard, medicinal salves and soaps. They also grow peppers, garlic, onions and spices for the sausage and salami, and herbs and flowers for the salves. Whatever they can’t make or grow they source local whenever they can.
