With tender green leaves and crunchy white stems, it’s perfect for stir-fries, soups, grilling, or simply sautéed with garlic and a splash of sesame oil. Rich in vitamins A, C, and K, plus antioxidants and calcium, it’s as nourishing as it is versatile.

Stuart Kramer, along with his partner Paul, tends a vibrant 2-acre farm in Colorado’s North Fork Valley. Together, they grow a diverse mix of vegetables, raise chickens, and care for bees—nurturing the land with organic practices, without the use of pesticides or chemical fertilizers.

“We’re not certified organic,” Stuart says, “but we farm like we are—and I’m especially proud of the rich topsoil we’ve built over the past seven years. It’s the foundation of everything we grow.”

Their small farm is rooted in care, community, and a deep commitment to fresh, clean food for the people they serve.
