These broad, dark-green leaves are rich in fiber, iron, and vitamins A, C, and K. Perfect for slow braises, quick sautés, wraps, or added to soups, they bring earthy flavor and sturdy texture to any dish.

Stuart Kramer, along with his partner Paul, tends a vibrant 2-acre farm in Colorado’s North Fork Valley. Together, they grow a diverse mix of vegetables, raise chickens, and care for bees—nurturing the land with organic practices, without the use of pesticides or chemical fertilizers.
“We’re not certified organic,” Stuart says, “but we farm like we are—and I’m especially proud of the rich topsoil we’ve built over the past seven years. It’s the foundation of everything we grow.”
