Crafted with pasture-raised elk from small family farms, our Elk Bolognese is a labor of love, made entirely by hand in Carbondale, Colorado. Unlike mass-produced sauces, we embrace old-world techniques and premium local ingredients to create a deeply flavorful, melt-in-your-mouth experience.

We do what most commercial makers wouldn’t dare:

Elk has been a staple of the Roaring Fork Valley for thousands of years, sustaining the Ute people and their ancestors. Unlike factory-farmed meats, our elk is naturally raised without growth hormones, antibiotics, or chemical feed additives, making it a clean and sustainable protein choice.

Why we love Aspen Provisions:

Looking for a restaurant-quality meal that’s dead simple to prepare, and locally unique?  We got you and your pasta covered.
We do all the stuff that most commercial makers would never do, like make elk the #1 ingredient, like searing the elk in meatballs to generate the flavors of the Maillard reaction, like mashing by hand for 20 min in an acidic white wine to tenderize the meat, like hand chopping and reserving the pancetta and some of the vegetables to add them in at the end so you can see all the ingredients, like finding the best locally-made wine and pancetta to use, and like stirring through a 2+ hour braise to assure complete melt-in-your-mouth tenderization.
Elk is a healthy source of protein.  No one is factory farming elk with chemical feed additives, growth hormone, and indiscriminate anti-biotics to meet the demands of a mega market.
All of our elk is pasture-raised on small family farms around here, and processed at a USDA-supervised craft butcher here on the Western Slope.
Aspen Provisions Elk Bolognese is made in small batches, by hand, in Carbondale.

Aspen Provisions is a new family business.  Our mission is to connect locals and visitors to the history, culture, and ecology of this area through great food experiences.
If we aim to tell the story of the RFV through food, then it makes sense to start with Elk. This valley sustained the Ute people and their ancestors for thousands of years as a productive hunting ground.
We look forward to continuing our mission with new products, new friends, and new local dinner-table stories.
