Delicate, nutty, and full of character — our ½ lb box of Beech mushrooms (also known as shimeji) brings elegant flavor to everyday meals. Grown with care at Berry Fungi Farm, these petite mushrooms grow in tight clusters and cook up beautifully tender with a mild, buttery bite.

Why Beech?
Beech mushrooms are prized for their firm texture and sweet, umami-rich flavor. They hold up well in cooking and pair beautifully with everything from roasted vegetables to pasta and seafood.

How to Use Them:

  • Sautéed with Garlic & Butter: A simple side or topping for toast, eggs, or steak.

  • In Stir-Fries & Curries: Adds a touch of texture and richness.

  • Tossed into Pasta or Risotto: Finish with fresh herbs and a little parmesan.

  • Roasted Whole: Try with olive oil, salt, and a dash of balsamic — earthy and irresistible.

Pro Tip: Trim the base and separate the clusters just before cooking. No need to wash — just brush or wipe gently.

More About Berry Fungi Farms:

Here at Berry Fungi Farms, we believe in sustainable, regenerative agricultural practices, and in eating nutrient dense, organic foods.   We embarked upon the fascinating journey of Fungi cultivation on our farm in 2023, out of a desire to offer something fresh, healthy, and different to our community, and the communities surrounding us!
We began selecting cultivars that can be grown on the agricultural residuals already produced in our valley (Locally sourced pesticide free, organic whenever possible/available, Straw. Local hardwood sawdust from the millners in the area,  excess bran from Mountain  Oven Bakery's flour production, etc) and have formulated our substrate recipes to be a diverse blend of what is available season by season. Taking other's excess, and utilizing the incredible digestive capabilities of mycelium,  we are creating a fully looped ecosystem, in which we can take our fully expended fruiting blocks,  and create Hugel-Kulture hybrid beds, allowing us to transform the farm Into a long term,  non irrigated,  berry "orchard".
Excess expended blocks are being composted, tested, and will be available to the local community at a negligible rate beginning in 2025.
The Health benefits of each individual mushroom species we cultivate are numerous,  and should enhance the well being of all consumers, while also providing an exciting use for agricultural biomass waste products.
